Vegetarians, vegetable smoothies and grilled cheese

Within the past six months, I shifted my way toward a vegetarian diet.  It is still challenging to maintain because of my life-long (bad) habits and distaste for vegetables.  Good thing they have grilled cheese!  It's not the healthiest but helps me stick to a vegetarian diet.  With that, I'm broadening my taste and learning to like vegetables.  I try to incorporate veggies creatively or I hide them in things (hopefully healthy things).  In the mornings, I usually have a Spinach Smoothie (2 cups spinach leaves 3/4 almond milk, 1/2 cup frozen berries and 1 banana). I never would have thought I'd eat raw spinach that wasn't drowning in salad dressing...
